Most people these days have heard of coeliac disease - or maybe you even have it?

Did you know that osteoporosis is a complication of untreated coeliac disease? The small intestine is responsible for absorbing important nutrients, such as calcium. Calcium is essential for building and maintaining healthy bones. Even people with coeliac disease who consume enough calcium are deficient in this nutrient. And because calcium is needed to keep bones healthy, low bone density is common in both children and adults with untreated and newly diagnosed coeliac disease.

While we're talking gluten free, have you heard of quinoa?  Pronounced "keen-wah", this wonderfully nutritious superfood is quick to cook (around 15 minutes). It has a delicate, nutty flavour and is great alternative to other grains - although technically it isn't a grain but rather a pseudo-cereal (a non-grassy plant used in much the same way as cereals and grains with a similar nutritional profile). Quinoa is naturally gluten-free and contains iron, B-vitamins, magnesium, phosphorus, potassium, calcium, vitamin E and fibre. It is one of only a few plant foods that are considered a complete protein and comprised of all essential amino acids. Quinoa also has a high protein to carbohydrate ratio when compared to other grain products. It was proposed by NASA to be an ideal food for long duration space flights!  If you haven't cooked quinoa before, here are the simple steps:
  1. Use 1 cup of quinoa to serve 2 people (but consider cooking extra so that you can enjoy it as a porridge the next day or throw some into a salad).
  2. This step is important.  In a fine mesh strainer, rinse the quinoa well under cold water. Quinoa has a coating called saponin (a natural insecticide to protect the seed) - this can give the quinoa a slightly bitter taste if not removed by rinsing.
  3. Combine 1 cup of quinoa to 2 cups filtered water and place them both into a pot.  You can add a very small pinch of sea salt if you like, then bring it to the boil.  Reduce heat to very low, simmer for 10 – 15 minutes or until all the water has absorbed into the quinoa.  Place a lid on the saucepan, rest the quinoa for 5 minutes then fluff it with a fork before serving.

This highly nutritious grain can be substituted where rice is called for or as a super porridge instead of using oats (add crushed flaxseed, banana, honey and walnuts).  For lunch combine quinoa with tinned tuna, spring onions, grated carrots and leafy greens then dress with lemon juice or tamari (wheat free soy sauce).  Be adventurous and enjoy!
