Dance around the kitchen
and make some Dancing Soup!

 

Ingredients:
4 Tbs. olive oil

1 c. onion chopped fine
4 garlic chopped fine
1 c. celery chopped, diced or processed
3 c. sweet potatoes, peeled and
   cubed bite size
1 c. sun dried tomatoes
2 cans of chickpeas,
   (15oz. each, low sodium, organic)
2 c. fresh kale
8 c. vegetable stock
a dash cinnamon
a dash cayenne
2 bay leaves
1 tsp. basil
1 tsp. pink salt
1 tsp. turmeric
2 tsp. paprika
1 T. tamari

Cut the onion in 1 inch blocks, process in food processor and place in olive oil, start sauteing, process the garlic.

Saute onion and garlic, in olive oil, add the bay leaves and stir a bit, coat everything with oil and cook till onions turn clear, add celery and sweet potato cubes, cook about 15 minutes low heat. Stir occasionally but not to much or you will mash the sweet potatoes. Add sun dried tomatoes, chickpeas, kale, and vegetable stock, simmer 15 minutes. Add cinnamon, cayenne, basil, salt, turmeric, paprika, and tamari. Simmer 10minutes. Taste the explosion of flavors and see the the rich colors that made me dance when I first created this soup!

Adding spices last gives this soup its secret dancing powers.

Serves 6
