The Deans decry that Brunch IS better at home and students in our October 12th class got the full scoop. Fear not fellow Brunch Buddies, we've got some pro tips for you in this week's newsletter.  A trick we are going to stick up your sleeve is that Eggs Benedict do not have to be those behemoths served in restaurants. Make your own mini English Muffins and top them with quail eggs instead of chicken eggs. Check out the recipe on our blog
 
Our top brunch tips:
 
1.Timing is more important than ever, especially if you haven’t hosted many brunches. And believe us, the Deans haven’t given brunches in a while. Getting everything ready the night before is a lifesaver. Set the table, get out your glasses, pitchers, make flower arrangements. 
 
2.A full bar is not necessary. One alcoholic drink that swings both ways is plenty. A pitcher of Virgin Bloody Mary’s that can be spiked in an instant or a pitcher of fresh squeezed OJ that can have champagne, prosecco or vodka added, along with some coffee is plenty of libation. 
 
3.Entertaining in the daytime could become your favorite way to host. You are not doing dishes until three in the morning, your liquor bill is less and two courses is plenty. What’s not to love?

For this brunch class we went one direction with quail eggs, which got us dreaming about our next brunch class. 
Dean Pollak just met Joakim Noah (Chicago Bulls #13) so next time we are thinking Ostrich Egg Benedict.
By the way Dean Pollak is 5’ 9” so maybe when Joakim comes we will need two ostrich eggs.
