Last day of Prep

You're almost there! Phase 1 begins tomorrow. We know that prepping has been a lot of work but you'll be really glad you did it come tomorrow. There are a few more suggestions for today to get the majority of the prep work for the recipes completed.
  • Precook a lot of rice. Rice is the only allowable grain so it's used in a number of recipes. We suggest cooking 3 cups of long grain brown rice,1 cup of wild rice and 1 cup of short grain brown rice. Store them in the refrigerator.
  • Cook the soup ahead of time. Soup with the new biscotti recipe makes a great lunch, especially at work. We suggest making the soup today and divvying them up in containers so that your lunches are prepared today – for the rest of the week.
  • Make a side dish or two. The side dishes can be eaten with lunch or dinner or even a snack. So if you have time today make a few ahead of time so this week they will be in the fridge waiting for you when you get home from work.
