Easy Meal Suggestions

I make meals using recipes quite a bit but sometimes I'm tired or feeling lazy so just throw something quick and easy together with food I have in my kitchen. For instance, I've added turkey back so lunch one day looked like this:
  • Cooked turkey burger with already cooked onions and garlic mixed into the patty (I always have cooked garlic and onion in my fridge), topped with avocado slices on a bed of baby spinach that was tossed with the Herb Vinaigrette. Quick, easy and tasty.
Other quick ideas:
  • Grill or bake some chicken and use it on top of salads.
  • Easier yet, buy a plain rotisserie turkey or chicken and serve with steamed veggies for dinner. Use leftovers to make chicken stock and/or chicken salad.
  • Try brown rice cakes (i.g. Lundberg Brown Rice Cakes) with a nut butter as a tasty snack. Add some Berry Compote or Cran-Raspberry Sauce (page 256) and cashew butter for a nut butter and "jelly" cake. (Brown rice cakes can be found online or in stores like Market Basket, Hannafords and Ocean State Job Lots).
  • For breakfast, scramble up some eggs and serve them with left over veggies.
  • Dates are back which means some varieties of Larabars are allowed – Cashew Cookie, Pecan Pie, Coconut Cream Pie, etc. (Larabars can be found at most conventional grocery stores and all health food stores. They can be found on VitaCost in bulk).
