Pasta and Meatballs in Phase 2

I was in the mood for a pasta dish last night so made the Mixed Herb Pesto with Brown Rice Pasta (page 141) for my husband and I. I thought it'd be nice with meatballs but beef doesn't come in until Phase 3.

I made some modifications to the meatball recipe making it allowable for Phase 2. If you'd like to try this modification, go to page 187 and review the ingredients list for the meatballs and follow the directions below:
  1. Omit the recipe of Garden Fresh Tomato Sauce from the meatball ingredients list.
  2. Substitute the quinoa in the meatball ingredients list for 1 tablespoon of chia seeds soaked for 5 minutes in 3 tablespoons of water.
  3. Follow steps 2 through 5 for cooking instructions.
