What is a Firkin? A firkin is a small cask that is used by brewers to create real, live ale that has not been stripped of its character by fining, filtration or other means of sterilizing.
The beer is carbonated through the fermentation process, so there is no need to introduce CO2. Brewers now use firkins to produce very small batches of special beer that may never see large scale production.
