Eduardo Aguiar has followed a very traditional path to becoming a sushi chef, albeit it not in Japan. He began by paying his dues as a dishwasher in the back kitchen, before gradually learning, under the strict tutelage of some of London’s leading sushi chefs, how to cook perfect rice, how to prepare whole, fresh fish, and how to present sushi and sashimi with elegance and finesse. Now Head Sushi Chef at Chisou Knightsbridge, Chef Aguiar is committed to creating exceptional sushi, carefully crafted to delight his diners.

Chisou is an oasis of Japanese tranquillity, hidden away in bustling Knightsbridge. The interior has a traditional teahouse look, with tatami mats, discreet screens, and cosy booths creating a relaxing atmosphere in which to enjoy sushi and other classic Japanese dishes. Chisou specialises in smaller dishes ideal for guests to share; signature plates include the horenso (spinach) salad and tuna yukke (tartar). Sushi is freshly prepared and beautifully presented by traditionally trained chefs, using only the finest ingredients. The menu is complemented by one of London’s most extensive sake lists.
