A very bold statement, but well suited for one of England’s most famous and cherished cheeses. Blue Stilton is named for the town of Stilton where the cheese was first sold in the early 18th century at an inn, advantageously located en route between London and Northern England. News spread quickly about the exceptional new blue, making the inn a very popular destination in and of itself.
 
Today, under Blue Stilton’s PDO status, the cheese can only be made by a licensed dairy in three counties: Derbyshire, Leicestershire and Notinghamshire, and solely with local milk. Tuxford & Tebbutt, established in 1780 and located in Melton Mowbray, Leicestershire, is one of just five creameries with a Blue Stilton license. T & T’s experienced cheesemakers use time-honored, traditional methods to create their world renowned Blue Stilton. Each wheel is individually and patiently turned and graded by hand during the closely monitored maturation process.
 
Prized for its smooth, honeyed, tangy richness and its striking blue veins that radiate from the cheese’s center to its rustic, natural, crinkly brown crust, England’s celebrated blue cheese is most typically enjoyed at 10 – 12 weeks of aging.
 
Blue Stilton’s long held title of “The King of Cheeses” is not only a testament to its distinctive, full-bodied taste, but also to the ardent commitment of upholding England’s treasured cheese-making tradition by multi-award winning dairies like Tuxford & Tebbutt.

Perfect pairings

Amarena cherries typically come from the Bologna and Modena regions of Italy and are a unique delight: small, deep rouge in color and sweet in taste. Toschi carefully hand-selects and pits the cherries, just as they have done since 1945, then sweetens them to perfect readiness for garnishing desserts, cakes and ‘semifreddi’ (ice-cream cakes), ice-cream or for use in cocktails and smoothies.
 
These exquisite cherries are also perfect to enhance cheese platters. Their sugary flavor goes beautifully with bold blue cheeses like Stilton. The remaining sweet syrup is excellent for refreshing drinks and making popsicles.
