Co-op Capital Campaign 2014 – Fundraising Brochure
A colourful new fundraising brochure has been sent out to all members,
which seeks contributions to our Capital Campaign to purchase the Co-op
land.This is the start of an intensified effort to attract community
investment over the summer months and to reach our goal of raising
$200,000 for the land purchase.
More information is available on our website. If, for any reason,
you have not received a brochure in the mail, they are available for
pick up in the Co-op. We hope you will support us and help realise our
dream of owning the Co-op land for the benefit of everyone on Cortes.

Introducing
Natural Factors!
The CNFC is glad to be bringing in a new line of products from Natural
Factors. Natural Factors is based in Coquitlam, BC where they produce a
range of supplements, herbal remedies, and health and wellness
products. They work with a variety of doctors, naturopathic doctors,
herbalists, and nutritionists and they conduct a great deal of research
in their own labs. In fact, they own and run a set of farms in the
Okanagan where they grow organic echinacea and other herbs that they
use in their products.

Baby Kale Salad with Roasted Russet
Potatoes and Warm
Chèvre
Serves 4-6
1 large russet potato
2 tbsp olive oil
¼ tsp salt
¼ tsp pepper
113 g soft chevre
6 cups packed young kale leaves, washed and torn if necessary
½ purple onion, sliced very thin
Dressing
¼ cup extra virgin olive oil
¼ cup raspberry vinegar (or apple cider vinegar)
1 tbsp honey
1 clove garlic, crushed
1 tsp Dijon mustard
¼ tsp salt
¼ tsp pepper
Pre-heat oven to 450°.
Slice the unpeeled potato into ½" rounds and toss with the olive oil,
salt and pepper. Lay the rounds out on a parchment-lined baking sheet
in a single layer and bake for 20 minutes, until browned and soft.
While the potatoes are baking, whisk together the ingredients for the
dressing. Toss the kale with onion slices and half of the soft chèvre,
crumbled. Dress and combine well.
Remove the potatoes from the oven and, while still on the hot baking
sheet, immediately divide and crumble the remaining chèvre on top of
each potato slice.
Plate the kale salad and arrange a couple of slices of warm potato with
the warm chèvre on top of each plate of salad.
