This Week at the Market..

Summer is fast approaching and your market has it all figured out for you, amazing food and outdoor entertainment for the whole family in one place! This week at EAV market, the talented and beautiful Sye Elaine Spence will be playing the music of her recently released album: Bloom, guest chef Lisa Dutta will be demoing at 4:30 a delicious curry, and we have couple of booths with activities to welcome the summer break for the little ones. 

We are looking forward to seeing you at the market, where you can support your local economy, farmers and artisans. We are open every Thursday from 4 to 8pm.

Cosmos Organic Farm
 

Cosmos Organic Farm is a 2-acre urban farm located in East Point, GA. The land has been worked by the same family over a century, focusing on growing top quality, sustainably-grown vegetables, herbs, flowers, and mushrooms to sell to Atlanta consumers primarily through farmers markets and at various restaurants in the Atlanta area.

The farmers at Cosmos Organic Farm find in their operation  a way to keep the land and community healthy for now and the future, while honoring the connection we have to earth as we form part of it's never ending cycle "we came from the land and will return to it…..In this way, we are the land."

Visit their tent to learn more about them and enjoy their seasonal produce.

Mini Cornbread Pie Recipe
by Becky Striepe, Glue and Glitter 
 
These miniature tamale pies are delicious with market fresh tomatoes and green onions. Serve them as appetizers, or eat a few for a filling main event.

Ingredients

•     1 3/4 cups organic cornmeal (yellow or white is fine)
•     1 cup vegetable broth
•     2 tablespoons non­hydrogenated vegetable shortening
•     1 tablespoon olive oil
•     1/2 of a large onion, chopped
•     4 cloves of garlic, minced
•     2 tablespoons apple cider vinegar
•     1 teaspoon each dried paprika, cumin, and oregano
•     dash of cayenne pepper, optional
•     4 cups of cooked beans (or 2 15 ounce cans) – I used a mix of black and pinto beans, but you can use whatever you have handy.
•     2 cups of fresh tomato, diced (about 2 medium tomatoes)
•     1/2 cup vegetable broth or water
•     salt and pepper, to taste
•     2 Haas avocados, sliced
•     1/4 cup green onion, chopped

 

Directions

1. Preheat the oven to 350F, and line a 12­cup muffin pan with paper liners.

 2. In a large bowl, combine the cornmeal, broth, and shortening. Your goal here is a malleable dough that’s between the consistency of pancake batter and bread dough. Shapeable, but not runny.

3. Divide the dough between your muffin tins, pressing it down into the bottoms and up the sides. You basically want to make little cornmeal dough “cups.” Make sure there are no holes in the dough, because you want the cups to hold the filling (see the second photo above). It takes more dough than you’d think to get solid cups with no holes. You’re going to use every last bit of the dough, so scrape the bowl, and fill those cups! Set the muffin pan aside.

4. In a Dutch oven or small saucepan, heat the oil on medium, and add the onion and garlic. Cook until the onions soften. Add the vinegar, spices, beans, tomato, and broth, and cook, stirring, until the tomatoes soften and the sauce thickens. Think chili. This takes about 12­15 minutes, depending on how moist your tomato was and what sort of beans you use. Just keep stirring until you have a nice thick stew. Season with the salt and pepper.

5. Use the bean mixture to top off your 12 muffin cups, and bake for 20 minutes. You will probably have some leftover bean mixture, and that’s OK! This stew freezes well. Stick it in the freezer, and pull it out to use as a taco stuffing on an evening when you don’t have time to cook.

6. Let the batch of mini cornmeal pie cool for about 5 minutes before you pop them out of the muffin pan. Top each pie with a nice­sized slice of avocado and a little bit of green onions, and set them out for your guests to devour!
