Recipes for Locavores

Rhubarb-Lemongrass Syrup

4 cups chopped rhubarb
3/4 cup agave*
1 cup water
2 TB minced lemongrass or lemon verbena

Combine all the ingredients in a saucepan and bring to a boil. Turn down low and simmer for 15 minutes until rhubarb is soft. Strain through a cheesecloth-lined sieve. Discard solids or set aside and use as jam.

Transfer syrup to a jar and chill.

*You can sweeten with honey or sugar, you might want to increase the amount to 1 cup. If using honey, its flavour will come through, and you will lose some of the purity of the rhubarb taste – but who says anything’s wrong with the taste of honey?
