Arugula Mousse with Fried Chickpeas + Lemon

Servings: A lot  -  Prep about 25 minutes

  • 1 8 oz can chickpeas, drained
  • 2 cups frying oil, canola/vegetable/etc
  • 2 tsp salt
  • 1 avocado, pitted and skin removed
  • 1 cup Atlanta Fresh whole milk plain yogurt
  • 2 cups Arugula, washed
  • 1 tsp lemon juice
  • 1 garlic clove
  • fresh dill to taste
  • salt and pepper to taste
  • lemon for garnish
  1. Heat canola oil in small saucepan. the oil needs to be hot hot and you need to be careful. test oil for readiness by dropping in a chickpea. if it sizzles and floats to the top you’re ready to fry.
  2. Fry as many chickpeas as you want. these are also a tasty snack, so make extra. It takes about 1 minute to fry. remove from oil and sprinkle with salt
  3. Place yogurt, avocado, arugula, garlic, lemon juice, and dill in food processor. process for 2-3 minutes until creamy and a uniform color exists. taste. and then add salt and pepper to taste. whip for another minute.
  4. As you can see, i put my mousse into a squeeze bottle for easy dispensing… but store in anything you like.
  5. For serving, dispense a TBS of mousse onto a spoon, garnish with 2-3 chickpeas, and a a little squeeze of lemon. therefore, at a party or wherever, guests can pick up a spoon and it’s all ready to go.

  • 1/4 cup olive oil
  • shredded parmesan cheese (optional)
  1. Preheat oven to 350
  2. wash and prep Turnips. I like to cut them in quarters so they roast evenly.
  3. Mix turnip pieces with olive oil and salt. Roast in oven for 15-20 minutes till tender.
  4. Meanwhile, brown butter in medium skillet over medium heat. Browning butter is a glorious act. The aroma will knock you to your knees. It’s nutty and sweet. Be careful not to go too far or else you’ll have burnt butter which does not taste good.
  5. Once butter is nice and browned, add turnips and hear the sizzle. Feel free to add a little more salt here, but it’s not necessary. Allow turnips to get nice and crispy and browned, about 5 minutes. The butter will have soaked into the veggies so nothing should be soggy.
  6. remove from heat toss with parmesan and eat!

DOUBLE SNAP

The Decatur Market is a grateful partner of Wholesome Wave Georgia, an organization that doubles every SNAP/EBT dollar spent at the market. Families using SNAP get twice the purchasing power for healthy food!  $1 = $2. Visit the main info booth to get SNAP tokens or to find out how you can support the program.

Bike to the Market

Your efforts to support your community don't have to end at buying local. Choose walking or biking to the market instead of car transportation, and help improve your neighborhood's carbon footprint. Cruise the roads of the East Atlanta Village and enjoy the outdoors in support of your community.

Driving to the market?  Park on the sidestreets off Stokewood Ave or try the lot located at 1231 Glenwood Ave - open Thursday from 4-8pm only for market patrons.
