Ausbruch: now officially protected 

Heidi Schröck has two of them!


The traditional, nobly sweet Austrian wine ‘Ausbruch’ has been officially redefined and given legally protected status. As of 14 June, an amendment to the Austrian wine law specifies that Ausbruch is a sweet wine of the same gradation as a Trockenbeerenauslese – 30° KMW (156° Öchsle) – that has been grown in the municipality of Rust on Lake Neusiedl. This is a milestone for the traditional wineproducing town and its growers. How fitting, then, that Heidi Schröck is now presenting two Ruster Ausbruchs, both from the initially difficult and ultimately splendid vintage 2014.

A sweet wine also requires a sense of terroir

The value and virtues of sweet wines from the town of Rust are legendary – like its winegrowers’ pride and desire for freedom. Even three hundred years ago, they were able to extract a charter for Rust from the Habsburg monarchs, giving it the status of an independent free city – for which they paid in Ausbruch: 30,000 litres of it! The unique climatic situation on the northwest banks of Lake Neusiedl still remains today the greatest asset of Rust’s winegrowers. No wonder that they fiercely defend the unique position of their sweet wine  terroir – and their position has been confirmed now by the lawmakers.


And behind the successful Ausbruch stands a woman

Winegrower Heidi Schröck has always been one of the driving forces behind Ruster Ausbruch. In 1991 she founded the Cercle Ruster Ausbruch together with winemaker colleagues in order to promote the image of Ruster Ausbruch. And recently she has been heard from with a new campaign, one that promotes sweet wines (and particularly Ausbruch) as table-companions to fine dining. Out of the dessert-category now and moving over to the spicy dishes: to smoked fish or grilled fowl, with curry or lamb ragout; Heidi Schröck loves discovering new combinatorial possibilities – for her two new Ruster Ausbruchs from the fantastic 2014 vintage as well: 

Ruster Ausbruch Turner 2014

The vineyard Ried Turner yields the Furmint and Sauvignon Blanc that produce this Ausbruch. The great wine is intensely concentrated, tightly knit and uncompromising, wine that ought to be paired only with very assertive flavours – because it would not take anything else seriously! A classic foie gras inspires it to shine beautifully, while other partners on the same level would include ribeye steak, loin of venison, bone marrow or wild boar ham. From the cheese board, try Vacherin Mont d’Or or a smear-ripened red cheese. 50% Furmint, 50% Sauvignon Blanc. 11% alcohol.

Ruster Ausbruch Auf den Flügeln der Morgenröte 2014 (On the Wings of Dawn)

This Ausbruch from Welschriesling and Weissburgunder at first seems a bit plump, but then reveals its brightness and fresh flavours – like its namesake, the break of day. Recommended partners should be salty/sour – like grapefruit, rhubarb, salted almonds and ripened Alpine cheese – or perhaps fiery like chilli; maybe savoury like hazelnut cracknel with fleur de sel. 50% Welschriesling, 50% Weissburgunder. 11% alcohol.
