Whats new at Genesis Kitchen? 

Farmer's Markets, New Retail Locations, and More!
 
 RECIPE OF THE MONTH: TUSCAN BAKED BEANS
We are thrilled to carry RANCHO GORDO beans from Napa, CA. Heirloom varieties that have so much flavor and potential - plus they are so fresh you can actually plant them in your garden. This is a unique recipe that was a very pleasant surprise, and perfect for a summer picnic.   
TUSCAN BAKED BEANS

2 cups dried Rancho Gordo Alubia Blanca (or similar variety) beans, pre-soaked
2 tablespoons extra virgin olive oil
3 large sage leaves
2 large cloves of garlic, coarsely chopped
Salt and pepper, to taste
Lemon wedges (for serving)
Extra virgin olive oil (for serving)

Pre-heat the oven to 375. Place the pre-soaked beans in a casserole dish and cover 1/4 inch with hot water.
Stir in oil, sage, and garlic. Cover the dish tightly with foil and use the tip of a sharp knife to puncture the foil in six places. 
Bake for 2 to 2 1/2 hours, until the beans are tender and creamy. 
Season the beans with salt and pepper, and serve with a lemon wedge and drizzle of oil.
These beans also make a terrific dip or bean topping for bread, perfect for quick and simple snacks and meals.

Columbia Falls Community Market starts tomorrow, Thursday May 18th. We will be there each week with a selection of our olive oils and balsamics. We will not be able to offer refills at the market but samples will be poured, friends will be made. 
WELCOME FLATHEAD FISH & SEAFOOD's RETAIL STORE! 
This company has been flying in the finest fresh fish for years supplying restaurants, stores, and individuals. This Saturday they are opening their retail store at 3820 Highway 40 near Columbia Falls. Grand Opening from 12 PM to 6 PM. 
This will be a retail outlet for a seafood-friendly section of our oils and balsamics.

NEW EVOO:

ITALIAN CORATINA


A wonderfully fruity Italian oil! This Coratina has classic notes of green banana and apple peel. This oil has a heavier mouth feel and jolt of pungency on the back end. An excellent choice for folks who don't mind bitterness or pungency!


At 445 ppm, this is our current highest polyphenol oil.
