The Original Grilled Cheese |
Atalanta Halloumi
Produced on the Mediterranean island of Cyprus and dating back to the Medieval Byzantine period, Halloumi is the original grilling cheese, unique in its ability to resist melting even at high temperatures. Atalanta Halloumi is made from 100% pasteurized sheep’s milk and is flecked throughout with mint leaves. With a texture similar to mozzarella and a feta-like flavor, this hearty, squeaky, briny cheese is the perfect foil for the bounty of summer’s garden. Suitable for vegetarians.

Dorati & Grilled Cheese |
MENU Dorati |
What are Dorati, you might ask, well they 're luscious, perfectly ripe cherry tomatoes. Our partner MENU hand-picks Italian cherry tomatoes at the peak of the season, then dries them briefly under the Apulian sun. Sweet and intensely flavored with a soft, fresh texture, Dorati are packed simply in olive and sunflower oils with fresh basil to enhance their delicate sun-ripened flavor.

Our favorite way with Halloumi |
Brush thick slices of Halloumi with olive oil and grill directly on the grate over high heat until nicely charred on the outside and scorching hot on the inside, about one minute per side. Serve with a squirt of lemon juice and a drizzle of olive oil with Dorati cherry tomatoes and torn fresh herbs on the side.
Pairing: Pairs well with a patio. (And a crisp, cold Pilsner or Sauvignon Blanc.)
