Taken from the word tapar, which means “to cover”, tapas are small plates traditionally served in Spanish taverns to accompany glasses of sherry. And while their origin is unclear, the most popular theory is that small slices of bread topped with cured ham were used to cover the sweet wine, serving the dual purpose of keeping flies out of the glass and stimulating the patrons’ thirst.
