A PDO certified cheese from the La Mancha region in central Spain, Manchego is made with whole milk from pure-bred Manchega sheep raised on registered farms. Don Juan 6-month Manchego exhibits a nice level of complexity and has just the right mix of savory and sweet. Its rich golden paste is firm and surrounded by distinctive herringbone prints that mimic the traditional look when cheese curds were drained and pressed in esparto grass baskets.
