It has never been easy to be patient, yet it's probably harder now than at any time in history, due to our increasing reliance on technological advances that enable messages and information to be sent and received from all over the world instantaneously, with only a few clicks. Fortunately, patience is a virtue that can be cultivated and nurtured over time. And you will be pleasantly surprised how being more patient can increase our relaxation and peace of mind thus positively and powerfully impact the quality of our lives. Actually, patience is an invincible weapon in life.

Omelette with 3 free-range eggs with grilled onions, tomatoes, kale and Gorgonzola cheese.  This is served with our famous European breakfast baked potatoes and  multi-grain toast or two pancakes. Whole wheat pancakes   75¢ extra

Turkey BLT Sandwich         $8.95  
Grilled vegetarian turkey, bacon, romaine lettuce, tomato with a dash of tamari-mayo served on toasted multi-grain bread.

Beets
Healthy Dietary Tips

Rich, sweet, and earthy in flavor, these ruby-red root vegetables are highly nutritious and provide fiber, folate, potassium, and such phytochemicals as anthocyanins and saponins. 

What’s  In It?

Betacyanin. A type of plant pigment, betacyanin is under review for defending cells against harmful carcinogens and is also being studied for its potential as a tumor-fighting compound.

Betaine. Preliminary studies suggest this substance may be helpful lowering homocysteine, an amino acid associated with increased risk for heart disease.

Fiber. Soluble fiber in beets may be linked to the reduction of LDL ("bad") cholesterol levels.

Folate. Folate may help prevent birth defects and may also protect against heart disease and cancer. (One cup of cooked, diced beets provides 136 mcg of folate, which is 34% of the Daily Value.) 

Oxalates. If you are prone to kidney stones or gout, avoid beet they are high in oxalates. Oxalates form tiny crystals that can contribute to the development of kidney stones.

Saponins. Available in small amounts in beets, saponins may bind cholesterol in the digestive tract, lowering the risk for heart disease.     

Add more to your diet

- Puree beets with yogurt or reduced-fat sour cream and vinegar to taste. Chill and serve as a refreshing summer soup.
- Add sliced cooked (or pickled) beets to chicken or meat sandwiches In place of sliced tomatoes.
- Shred peeled raw beets and use in place of carrots in carrot cake, carrot bread, or muffins.
- Make a slaw of shredded peeled raw beets, balsamic vinegar, mustard, and dill.
- Combine diced, cooked beets with olive oil and lemon juice and use as a sauce for salmon.

Maximizing the benefits 

To preserve the anthocyanin (betacyanin) in beets, it's best to roast, bake, or microwave whole beets in their skins. If you cook peeled or cut-up beets, the vegetable's pigments (and thus the anthocyanins) leak out and are lost. Don't cook beets in water, as some of the water-soluble B vitamin, folate, will leach into the cooking water.
