Thanksgiving is next week!

Check it out - next Thursday is Thanksgiving!!  We are closed on Thursday to be with our families, but we will be here Wednesday, Friday and Saturday - hours as normal... 10 am to 6:30 pm, but we stop cleaning fish at 6:00 as usual.  Plan ahead to get what you need.  Be safe traveling and have a happy holiday!

 
Sexy Fish - Red Drum Fish

The Red Drum Fish is also known as the Spottail Bass.  The common name "Drum Fish" comes from their ability to make a drumming sound during courtship or when pulled from the water.  They do this by rubbing special muscles against an air bladder, thus producing the drum-like sound.  Their general coloration is iridescent silvery-gray overall, with a coppery cast that is usually darker on the back and upper sides. The Latin name sciaenops ocellatus means "shady eye-like spot (on tail)," and most red drum have a single distinctive black spot at the base of the tail. The fish can grow to 5 feet long and 95 pounds but the average is 5 to 30 pounds.  They have a mild, sweet flavor with firm flesh and large moist flakes. 

Cajun Red Drum

Ingredients
  • 2 Red Drum fillets
  • 1 Tablespoon Paprika
  • 3/4 teaspoon Garlic Powder
  • 1 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 fresh ground black pepper
  • 1 pinch cayenne pepper
  • 2 teaspoons olive oil
  • lemon wedge
Directions
In a small bowl, combine paprika, garlic powder, thyme, salt, pepper, cayenne and oil to make a paste.  Rinse and pat fish dry with paper towels.  Using the back of a spoon, rub the paste mixture evenly over both sides of the fish.  Cover with plastic wrap and refrigerate for 2 hours.  Preheat BBQ grill to medium high and grease grill.  BBQ, turning once (about 3-5 minutes per side).  Alternatively you can cook in a non-stick frying pan over medium high heat.  Cooking time will vary depending on thickness of fish.  Remove to plate and serve with lemon wedges.
