MEET TARA!

Tara's one of our favoritest repeat offenders at the Des Moines Farmer's Market. She's a super foodie who gives us the 411 on all the cool cooking stuff going on in DM. She turned us on to the Cheese Shopand she helped out at our wild mushroom cooking class in October. Oh and she rocks Packers gear like nobody's business. Tara looooooves Peter Rabbit and Alliyum. DENNIS THE HOPPER

People often ask us: "What equipment do you guys use to make this stuff?" By far the coolest thing we use is our bright red hopper, above, made by Collin's ingenious dad. It saves us tons of time on filling jars using the turn key at the bottom. We've named this hopper Dennis, after Collin's dad, and after Dennis Hopper. We also use grinders, food processors, and an industrial dehydrator for drying herbs and veggies like radishes. Currently we're drying collard greens for a crazy limited edition holiday flavor called Dixie Duster: smoked sea salt, dried collard greens, white peppercorns and SUPER hot homegrown green chilies! POW!

HERKY PERKY TURKEY!

Seriously, people: Herky Perky makes the best roast turkey ever in the history of turkey.
We brine the bird first.

1 gallon water

2.5 c kosher salt
2/3 c firmly packed light brown sugar
1 tbsp peppercorns
That's enough brine for up to 18 lbs of turkey
Optional:
1 onion, lemon and/or orange sliced in half
1 bulb peeled garlic
We line a canning pot with a trash bag and brine the bird in that while it sits in the fridge for 2-3 days.

When you're ready to roast, smoke, grill, deep fry, or whatever, slather the bird with a paste of olive oil and Herky Perky: 2 tbs olive oil to 1 tbsp Herky Perky

Don't forget the Grilla Goriila/GGX mashed sweet taters on the side, and the Whassamatterhorn oyster crackers to start.
