Our CSA Farm News - Week Four

Our first cool day of the season has us feeling all kinds of warm inside.  The beans are coming in strong along with our lettuces.  This week's shares will be filled with green and purple beans, arugula, dill, tomatoes, and kale.  

We've finally decided to plow under the beets which we direct sowed in late September.  The seeds germinated but roots did not establish.  The plants have been trying to grow in the ground for so long that the tops have become woody.  This is a complete loss and we will sow again hoping for better success with cooler temperatures.              

We are still anticipating some lettuce in next week's shares with swiss chard following a week or two later.  This week will be the last harvest from our first crop of Ethiopian kale.  It is trying to go to seed and has provided us with four great week's of kale for our shares.  

Don't forget the pick up schedule has changed for Riverview this week:
Riverview pick up will be Wednesday 11/25 4-7pm at the Farmers Market.  
On Farm pick ups will be held Saturday, November 28th 9-11am.

When you come to A Simpler Place in Time farmers market, your mouth may begin to water in excitement with all of the fresh vegetables that could possibly fill you and your family's plate. Not only will your family thank you for the real food, but so will your body and mind.
This week we have a few veggies that can help with more then a growl in the gut.  They are also an easy fix to our everyday nutrient needs.

Turn up the Turnip Greens!
Well I can tell you the yummy taste of turnips is linked to the exploding amounts of calcium.
Calcium is vital for strong bones, teeth and the maintenance of healthy gums. Calcium in turnips lowers cholesterol levels and helps prevent cardiovascular disease. This important mineral inside of the mighty root is also essential in blood clotting which leads to preventing certain types of cancer!
How can I cook this miracle root for the fullest nutrition benefits?
Start by cutting the greens into 1/2 inch Slices, letting them sit for five minutes helps enhance its nutrient dense properties to oxidase. We recommend steaming for maximum nutrition and flavor. Root and leaf. You can find many healthy steam recipes online.
Mix with Braggs Apple Cider Vinaigrette ( located in your local grocery store in the dressing aisle) to experience a full antioxidant meal!
Turnip greens and cancer prevention come together hormone sly in three systems:
1. The bodies detox system
2. Antioxidant system
3. Inflammation/ anti-inflammatory system
Turnips benefit all three of these in exceptional potent ways. Chronic imbalances in any of these three systems can increase risk of cancer.
Prevention of the following cancer types is most associated with intake of Turnip Greens: bladder cancer, breast cancer, colon cancer, lung cancer, prostate and ovarian cancer.

Winter squash should not be squashed! : butternut, spaghetti, sweet dumpling :
Do not let this hardy har har vegetable intimidate you.. The bright colors and brick texture make some people ask HOW do I prepare this? Fortunately it is one of the easiest and worlds HEALTHIEST vegetables to prepare.
Winter squash holds an unbelievable amount of Beta- Carotene! When you consume beta- carotene, it is converted into Vitamin A in the liver. This aids in cancer prevention by scavenging and neutralizing free radicals. Vitamin A prevents night blindness and other eye problems, as well as skin disorders such as acne. It Enhances immunity, heals gastrointestinal ulcers and protects against infections of the kidneys, bladder, lungs and mucous membranes.
Wow!!! The amazing phytonutrient content of winter squash makes us realize that this food is not just a starchy vegetable!! From potassium, vitamin B2, folate, omega 3 fatty acids and magnesium, it is a vegetable we should all celebrate this winter by adding to our tables!
BAKE OR STEAM: cut the ends off and cut the squash in half lengthwise down the middle. Scoop out the seeds and bake or steam.
Save the seeds!!!
Seeds from winter squash can make a great nutritious snack  filled with healthy oils. Linoleum acid ( the polyunsaturated omega 6 fatty acid) and oleic acid promote beautiful radiating skin and also normalize brain function. Layer the seeds evenly on a cookie sheet and lightly roast them at 160 degrees for 15-20 min. Enjoy!!

Yukon gold potatoes
Potato patattoo, either way these root veggies are an exceptionally healthy, low calorie, high fiber, food that offers significant protection against cardiovascular disease and cancer. We aren't talking about potato chips or greasy French fries but wholesome baked fresh organic goodness! Potatoes contain a variety of phytonutrient holding antioxidant activity.  This attracted UK scientists at the Institute for Food research who have identified Kukoamines in potatoes which are blood pressure lowering compounds.  In the past these compounds were only found in the richest nutrient teas of China.
Potatoes are also loaded with Vitamin B6 ( pyridoxine), this special vitamin is involved in more bodily functions than almost any other single nutrient! It affects both physical and mental health and is highly needed for normal brain function. B6 in potatoes is a diuretic, reducing the symptoms of premenstrual syndrome also aiding in reducing calcium oxalate kidney stones. When you eat a potato remember the Triple healing A's that are healing your body in every bite: treatment of allergies, arthritis and asthma.
Awesome fun fact!
Potatoes were brought to Europe by Spanish explorers who "discovered" them in South America in the 16th century. Since potatoes are also an amazing source if Vitamin C, they were subsequently used on Spanish ships to prevent Scurvy!
