Tis the Season...to Eat Oysters!

The French love their oysters. The average American eats a quarter pound of oysters per year. The average Gaul? Eighteen times that many, a full 4.5 pounds per year. Amazingly, 50% of those oysters are consumed during the winter holidays, and it’s no secret why—they know that’s when oysters are at their very best. As water temperatures plunge, oysters go on a feeding rampage, plumping up in preparation for hibernation, like a bear bingeing on apples before the long winter’s nap. They get insanely fat and sweet. And that’s where we are right now. So get out there, get busy, and, of course, Kiss & Tell.
