WHAT'S HAPP'NIN ?!
Mark your calendars and get your taste buds ready! We're getting psyched for The ~Spa City Farmers' Market Third Annual Chili Cook-Off~ on Sunday, January 24th. It's going to be HOT! HOT! HOT! Our local Heroes, the**Saratoga Springs Fire Department** and The **Saratoga Spa State Park Police** will be going head-to-head once again. At last year's chili cook-off, the Saratoga Springs Firefighters earned the crown in a close, tasty battle of chili against the Saratoga Spa State Park Police, and this year will be defending their Championship title. We will have a panel of judges to decide this rematch! Also, in the cook-off **Vendors vs. Vendors** where YOU decide who's got the ultimate chili. Last year, Malta Ridge Orchard & Gardens took the gold. Tune into Spa City Facebook, Instagram, & Twitter page for more details & updates in the coming days & weeks.

HEALTHY GOURMET KITCHEN:
Healthy Gourmet Kitchen -- Freshly made orange marmalade with organic cara cara oranges, blood orange juice, organic orange juice concentrate and a touch of organic lemon juice. This marmalade has no added refined sugar and only 4g total sugar per tablespoon serving. Cara Cara oranges are sweet and low in acid with notes of cherry, rose petal and blackberry. Stop by for a taste of our unique orange marmalade.
Orange-Balsamic Glazed Chicken
Recipe by, Mary Song of
HEALTHY GOURMET KITCHEN
2 tablespoons extra-virgin olive oil
2 pounds boneless skinless chicken breasts (free range)
freshly ground black pepper
1.5 teaspoon Healthy Gourmet kitchen Tuscan Salt or 1 tsp rosemary, 1/4 tsp rubbed sage, 1/4 tsp salt
1/3 cup orange marmalade
1/4 cup balsamic vinegar
1/2 cup chicken stock
2 scallions, whites and greens, finely chopped
4 cups baby arugula
Slice chicken breasts in two so you have two skinny pieces of chicken (it's cooks faster).
Season chicken with pepper and tuscan salt.
Heat pan over medium high heat, add oil. When oil is hot add chicken and cook for 3 minutes then flip and cook for an additional three minutes or until the chicken is cooked through.
While the chicken is cooking, whisk the marmalade, vinegar and chicken stock. Pour over cooked chicken. Cook for 2 minutes, add scallions and cook an additional minute.
Serve on a bed of Arugula.

We are open SUNDAYS 10am till *2pm (winter hours.) Plenty of parking at the National Museum of Dance, Lincoln Baths, and adjacent parking fields. On extra busy days, parking is always available at the *Warming Hut parking lot and parking fields as well.
