• Confit of Plums with Port & Star Anise: both the depth of dried prunes and the height of fresh plums, balanced with spice and sweetness. Pair with blue cheeses like Bayley Hazen Blue.
• Apricot Orange Conserve with Wildflower Honey: the aroma of fresh summer apricots in a jar, accompanied by a hint of citrus and earthy coriander and cinnamon spices. Pair with washed-rind cheeses like Oma, Winnimere, Alpha Tolman. 
• Orange Marmalade with 10 year Single Malt Whisky: a truly excellent classic marmalade with a smoky dimension that sings with cheese. Pair with hard cheeses like Cabot Clothbound Cheddar or Landaff. 

The pairings above are those we've liked best, but don't let that limit your experience!
