Since opening our very first restaurant in Covent Garden in 2007, we have sought to be a climate leader in the industry, challenging ourselves to ensure that each site has as low an environmental impact as possible. Our group, which currently has 23 locations, has reduced the average total energy consumption of newer sites (those established after 2013) by 36%. Further to this, we have regularly assessed the efficiency of older locations, and by upgrading systems and appliances have decreased the average energy consumption of older sites by 15%. For example, adjusting a heater battery at the Bluewater Wahaca led to a 76% reduction in gas use. In 2016, through offsetting the remaining unavoidable energy usage by investing in far-reaching energy-saving initiatives, Wahaca has been certified as having a net zero carbon footprint.

Tequila, from Mexico to the World!
The magical town of Tequila is the cradle of the world-famous spirit produced just a few miles from the capital, Guadalajara, in the state of Jalisco. Tourists in Tequila can visit La Rojeña, the oldest distillery in Latin America that showcases the process used to distill blue agave and offers tastings so guests can sample this Mexican elixir.
Those of us who work at Aeromexico, believe that we can change people’s futures by working together with others, so last month, a group of Aeromexico employees volunteered to help more than 25 families in two communities in the municipality of Acambay in the State of Mexico, as part of our Corporate Social Responsibility program.
Considering that food is fundamental to the community’s development, we worked with the Nourish a Child (Nutre a un Niño) organization building backyard gardens so families can grow healthy food and make money by selling their surplus of organically grown produce.
The project consists of several stages aimed at eradicating the poverty cycle in these communities by assisting families with the education and means they need to ensure their development.
We are very proud of our volunteers whose commitment to work together helps us contribute to building a better Mexico.
