Our next Artisan Cheesemaking Course begins January 20.

A Year of Education


What is life but a never-ending education? 2015 is no different, and we're starting the year full-speed with Fundamentals of Cheesemaking, offered jointly with Sterling CollegeA dozen lucky students are preparing for two weeks of cheese chemistry, theory, business planning and plenty of hands-on cheesemaking. This course is full, but will be offered again in 2016 - in the meantime, join the waiting list and find out first when registration opens. 

In 2015, we're adding several advanced cheesemaking courses to our schedule with Sterling College. Geared towards cheesemaking professionals, we're offering a Lactic Style Cheese workshop in July, followed by three 4-day sessions in August that may be taken together or individually: Blue Style Cheesemaking, Yield & Troubleshooting, and Hard Style Cheesemaking

  • This year we'll continue to host Academie Opus Caseus, a 4-day course for cheese professionals that follows cheese from cow to creamery, cave and retail counter. This course will be offered in June and again in September
  • We are also developing a summer Cheese Camp, a weekend course meant to ready cheesemongers for the Certified Cheese Professional exam offered through ACS.
  • Finally, we'll be offering a 1-day Pairing in the Pastures event here at our farm, to benefit the Lakeview School in Greensboro. The day is open to anyone who enjoys cheese, cows and a beautiful landscape. This one is still taking shape, but will involve a progressive cheese tasting (with food & beverages) at several locations on our farm... Stay tuned!
