31 Days of Encouragement 

Keep Your Resolutions this New Year's with Daily Encouragement from LC Foods!
Here at LC Foods, we are committed to encourage you and provide you with the latest resources as we embark on the New Year! Whether you are starting a low carb diet for the first time or you are jumping back on track after the holidays, we are here to support you this January!
So for each day of January, we will send you an email with a quick encouragement to keep you going and keep you on track!

Each day we will send you:

  • 1 Inspirational Quote or Story
Our goal is to SERVE you and not annoy you! We will send an email each day for January only, returning to our regular scheduled newsletters in February.

Day 1 - January 1st

Helpful Eating Tip #1

Don't drink cold water when you are eating, it stops digestion. Ice water can be harmful because it damages your body's ability to properly digest food.

Fresh Salad Recipe #1

Brussels Sprout and Arugula Salad with Walnuts

Ingredients:

  • 1 lb. brussels sprouts, trimmed
  • 1/2 cup chopped walnuts
  • 1 1/2 Tbs. walnut oil
  • 1 Tbs. cider vinegar
  • 1/4 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1 cup arugula leaves

Directions:


1. Using a mandoline, thinly shave the brussels sprouts lengthwise.
2. In a small fry pan over medium-low heat, toast the walnuts, stirring, until starting to brown, about 5 minutes. Let cool.
3. Put the shaved brussels sprouts in a bowl and add the walnut oil, vinegar, salt and pepper and gently mix.
4. Divide the arugula among individual plates. Spoon the brussels sprouts and their juices over the arugula, garnish with the walnuts and serve immediately. Serves 4.

Holly McNeal - Jackson, MS
Holly McNeal is a 38 year old nurse from Mississippi who has completely changed her life by adapting a low carb lifestyle. Born and raised in the South, she has always liked food and has always battled with her weight. Holly was diagnosed as a Type 1 Insulin Dependent Diabetic at age 17 and began followed the eating recommendations and taking insulin, but her weight just continued to spiral out of control. Seeing her mother having success with the Atkins diet, Holly decided to become her own test subject and with much success, she has now lost over 100 pounds! Holly says If it wasn’t for the companies such as LC Foods, she would be lost trying to figure out the best low carb books and products on the market. Holly is happy to share her story and hopes that it will help and inspire others!

KEEP A FOOD DIARY
