Fresh Salad Recipe #20 Cucumber Mint Salad
Ingredients:
2 eachenglish cucumber, sliced into very thin rings
1 mediumred onion, thinly sliced
1/4 cupgreek yogurt, plain and full fat
2 tbsplime juice, freshly squeezed
1/4 cupfresh mint, sliced thin
salt and fresh pepper, to taste
Directions:
1. Mix the ingredients in a bowl. 2. Let it sit for about 20 minutes. This will soften it and the flavors will meld together, but the crunch will remain. Serves 8
