STAFF PROFILE:
VERONICAH HAMPTON
Veronicah joined PCNZ in 2013 as the Executive Assistant to Pharmacy Director. She works as part of a support crew and co-ordinates various activities to keep everyone at PCNZ on track! Veronicah grew up on the shores of the sparkling Waitemata in Point Chevalier, Auckland and has studied teaching, tarot and astronumerology.
Veronicah has worked across a number of different business sectors including, health, food technology, electricity, governance, welfare, dairy, aviation and leather tanning. Her hobbies include creativity, art quilting, drawing, reading and active adventure holidays. She has been sky diving from 17,000 feet (see photo), been inside a nuclear power plant and would love to one day go white water rafting in the Colorado River down the Grand Canyon.
When asked about the best thing she's done, Veronicah said "I recently joined a weight management programme and lost 20kg in 10 weeks! RAW BROWNIES |
|
The perfect romantic dessert for two! Enjoy these simple and delicious sugar, dairy and gluten free brownies!!
- 2 cups of medjool dates (they're the squishier, stickier, tastier kind of dates)
- 1 cup of peacans
- 2-3 tablespoons of raw cacao powder
- 2 tablespoons of maple syrup (optional, can be replaced with any other liquid sweetener)
Makes 10 brownies
Blend the peacans in a food processor until they form a crumbly mixture, then add the dates and blend again before adding the cacao and maple syrup.
Place the mixture in a baking tray and either refrigerate for 3-4 hours or freeze for one to allow them to set. Then keep them in the fridge for freshness.
