  • Recipe from January Feast Bowl meal: Kale Lentil Salad

January has been a busy month for the garden, even if we've hardly been in the garden at all! Work, volunteer, and student internship opportunities with our programs for 2015 are circulating and we are excited to see who will join our circle for this year and beyond. A new academic term has brought with it interesting new student projects: EDCP 532 (Theories and Dimensions of Place-Based Learning) students are designing place-based curriculum for the CRUW youth program while LFS 350 (Land, Food and Community II) students will be compiling five years' worth of Feast Bowl recipes into an interactive online cookbook that will include nutritional information. In one short month the Medicine Collective will be join us for the first medicine walk of the year, alongside the start of our regular volunteer sessions in the garden to wake up the beds and start dreaming about another season of happy healthy foods and medicines! Read on to find out more.

Stay tuned for our next newsletter in early March where we'll be sharing our stories, successes, and challenges from 2014. We are excited to note that our community engagement grew greatly from the year previous: there were over 2300 visits to our programs in 2014! This included more than 500 UBC students from 13 faculties and schools and more than 15 community organizations. Check back here in early March to learn more.

Recipe from the February Feast Bowl meal: Kale Lentil Salad

This salad brings the bright flavours of dried cherries and lemon to a hearty winter salad full of protein. It was a big hit at the January Feast Bowl meal and a great opportunity to eat in-season fresh greens in the winter!

Ingredients
1 cup lentils (firm variety like French, Du Puy, Black, or Beluga)
1 1/3 cup water
1 bay leaf
1 tsp dried thyme
1 bunch kale (Lacinato is best)
1/2 cup lemon juice
1/4 cup dried cherries, chopped
1 Tbsp olive oil
1/2 cup feta cheese (optional)
Handful raw or roasted almonds
Salt and pepper to taste

Directions
  1. Combine the lentils, water, bay leaf, and thyme in a saucepan. Bring to a boil, cover, and simmer on low for 30-40 minutes.
  2. Meanwhile, wash the kale and cut out the centre vein. Stice into thin ribbons. Toss with 1/2 cup lemon juice and let sit for 30 minutes.
  3. If your almonds are raw, spread on a baking sheet and roast in the oven at 350 for 10-15 minutes or until fragrant. Cool before chopping.
  4. When lentils are cooked, drain any excess water, rinse with cool water, and set aside.
  5. Toss kale with olive oil, chopped cherries, feta, olive oil, almonds, and lentils. Season to taste with salt and pepper and enjoy.
