3 cheeses paired with Bien Fait Specialty Cakes!

Spring is here.

There's still two feet of snow in our fields, but spring has arrived. Willoughby is back in season - this year's cheeses are tasting great, with fruity aromas, meaty & buttery flavors, and a superbly spreadable texture. The maple sap has started to run and the backroads are turning into a muddy soup -- the myriad beauties of spring in Vermont! We've decided to celebrate the shift of seasons with a collection that sings of the sweetness of spring

Our Spring Gift Box features two delightful teacakes from Bien Fait Specialty Cakes of Greensboro, VT. Located a few miles from the Cellars, Bien Fait is a licensed L3C-corporation committed to donating 100% of its profits to local charities and non-profits. In 2014 their employees voted to support the Vermont Food Bank, organizations supporting cystic fibrosis research and victims of sexual abuse, and
a school for the deaf. Their teacakes are densely packed with fruit, with balanced sweetness and spices. They're a great complement to a cheese board for tea or brunch.

Each Spring Gift Box contains:
  • Willoughby. Our seasonal cheese is ready for spring! This sweet & buttery washed-rind cheese has a fruity aroma and creamy texture - perfect for breakfast or tea, outstanding with blueberry preserves. 8 ounce wheel.
  • Bayley Hazen Blue. Our signature blue cheese, made with raw milk. Dense & fudgey with sweet, chocolatey flavors and notes of anise spice. 8 ounce wedge.
  • Clothbound Cheddar. Made by Cabot Creamery, these wheels are wrapped in muslin and aged in our vaults to an age of 10-13 months. This is a richly savory cheddar with flavors ranging from beef broth to lemon curd and butterscotch. Dense, slightly crumbly texture. 8 ounce wedge.
  • TWO Bien Fait teacakes (about 6 ounces each):
    • Lemon Berry: a bright & fruity teacake with lemon zest, blueberries, currants & cherries in a buttery cake batter.
    • Honey Apricot: a balanced & nutty teacake made with almonds, walnuts, apricots and golden raisins, and sweetened with honey.
This collection will be available into May, by which time we hope to finally see our spring tulips up here in the Northeast Kingdom. Happy spring!
