Picnic Season is Here!

What are your plans for this weekend? I know I'm looking forward to taking in the awesome acts at the Shell, and enjoying long walks through Overton Park. All that fun sure is going to make me hungry though (the pea size mini me in my belly isn't helping...)!

This week's vendor highlight features Will Freiman and Brad Sheffield, from Hot Mess Burritos.
CYCFM: Where are you from?
HMB: I am from Walls, Mississippi, just south of Memphis.
CYCFM: How did you begin cooking?
HMB: I started cooking in high school. My grandma lived in Tunica and had a rigorous corn bread cooking class for her grandchildren.
CYCFM: What is your favorite part of running a food truck?
HMB: The best thing about running a truck so far is being able to meet and talk to new folks around the city.
CYCFM: What is our favorite dish to eat/cook?
HMB: I love to make pasta and biscuits, maybe anything with flour.
CYCFM: How do you relax?
HMB: My biggest hobby these days is gardening, but I always think about the river. I would love to be out on the river more.
CYCFM: What is your favorite part about the Cooper Young Community Farmers Market?
HMB: The market in CY is fantastic. I always meet someone new and I always see people I love. I have a bunch of people that live in Cooper Young and it is truly a joy to see all the smiling faces in the morning. Also, tamales. Even if I didn’t know anyone I would come for the tamales.

This week, let's celebrate the gorgeous radishes and carrots that have been popping up at the market with my inspiring country woman, Mimi Thorisson's recipe for Roasted pink radishes & carrots with balsamic vinegar & rosemary. Feel free to sub or beets to this recipe!
Roasted pink radishes & carrots with balsamic vinegar & rosemary
Serves 4 as a starter
Preheat the oven to 220°C/ 420 F
1 large pink radish, sliced finely
A bunch of small carrots
A few sprigs of fresh rosemary
2-3 tablespoons balsamic vinegar
1 pomegranate
A drizzle of olive oil
Coarse sea-salt and freshly ground black pepper
Place the vegetables on a roasting tray, drizzle olive oil, sprinkle salt and pepper and finely chopped rosemary. Roast for 20 minutes. Place on a serving plate and scatter pomegranate seeds all over. Drizzle with additional olive oil and balsamic vinegar if desired. Season to taste if necessary.
