It is only two more days until I head to Salo, Finland for the Powerlifting World Championships. I am proud and honoured to have been selected to represent Australia in the Masters 57kg division. It is over sixteen years since I first stepped onto the lifting platform in my first competition at Melbourne University. At the time I thought that I would just give powerlifting a go for a year or two to test how strong I could get. Seven international and fourteen national championships later I am still hungry for more. I look forward to sharing my results when I return home on June 18th but for those of you who would like to follow the results and live streaming take a look at the following links. I am scheduled to lift in Room 2 on Sunday 7th June, 12.30am Melbourne time.

Go for Gold

Golden Cauliflower and Quinoa
Another one of my favourites, this cauliflower dish is a great replacement for risotto.  Serve on its own or with a protein of your choice. Flathead tails are perfect!

1 cauliflower, chopped into pieces
1 cup quinoa
Turmeric
Ground fennel
Ground coriander seed
Ground cumin
Chilli flakes (optional)
Olive oil
Nigella seeds

Preheat oven to 180 degrees. Cook quinoa to packet directions and set aside. In a large baking tray drizzle chopped cauliflower with olive oil and sprinkle generously with spices. Shake everything around so that the cauliflower looks evenly coated. Bake in the oven for 30min or until cauliflower is tender.
Gently mix cauliflower and quinoa in a large bowl and sprinkle with nigella seeds. Can be served warm or at room temperature as a salad.

Serves 4.

Green Fuel for You

Green Juice
This juice is my favourite at the moment. Juice should not replace whole fruit and vegetables in your diet but drinking freshly extracted juice is a fantastic way to increase your vitamin and mineral uptake when you need to boost your immune system. Let’s face it, there is only so much broccoli you can physically eat!
 
1 cucumber
1 head of broccoli
½ bulb of fennel
3 kiwi fruit
1 Granny Smith apple
1 lemon, whole including skin and pith

Everything goes straight into the juicer, easy.

Will make approximately 1 litre of juice (enough for 4 serves) depending on your juicer. If you are using a Magic/Nutri Bullet just adjust your portion sizes.
