1. Bake Everythingnice Oatmeal Raisin Cookies as per instructions however flatten the cookies a bit more. Allow to cool.
2. Scoop ice cream onto one side of a cookie and then place another cookie on top.
3. Roll the edges in sprinkles or chopped peanuts (optional).
4. Serve.
