Eat Well. Avoid Toxins, Be Happy!

Do you find yourself shaking your head in disbelief that it's August already?   Maybe it's my age, but I find time flies faster and faster every year.  Before it's too late and we can't get good watermelon anymore, I thought you might enjoy my Watermelon Salad (published in the Elephant Journal).   Of course as my sister pointed out, you can also just slice up a fresh watermelon and enjoy its refreshing taste.  Or, you might want to try the salad below.
Tomato Cucumber Salad

As we eagerly await the tomatoes on our tomato plants, we've been buying cucumbers and tomatoes at the Farmers' Market.  Matt likes to buy slightly bruised tomatoes as we feel they deserve love, too.  When he brings them home, our new favorite is a light, refreshing tomato cucumber salad. 

Ingredients:
  • 1-2 cucumbers chopped into bite sized pieces
  • 1-2 fresh tomatoes chopped into bite sized pieces (or one container of cherry tomatoes cut in half)
  • 3-4 green scallions, chopped finely (use all of the delicious, healthy greens as well as the bulbs, just cut off the end with the stringy root)
  • A teaspoon or so of capers
Then:
  • Mix together
  • Drizzle on some olive oil
  • Add some of your favorite vinegar - Balsamic, Red Wine or Apple Cider are all excellent choices.
  • Enjoy!
