Your bi-weekly guide to plant-based eating - brought to you by Plant Eaters' Manifesto, a blog by Gather

Hi!

Welcome back to the PEM Essentials newsletter. If you're new here, welcome! We want to give healthy eating what it's been missing - simplicity, culture, and community. Just twice per month you’ll get a few of our recent blog posts along with curated outside resources to help point you toward what’s relevant, interesting, and valuable for a fellow plant-eater.

Our most popular recent blog posts:

+ Easy Yamadillas "At the end of a long and stressful day – a day when meal planning fell to the bottom of the to-do list (it happens to the best of us) – a simple dinner is welcomed. Simple food re-centers you after complicated days, it proves that fast food can be healthy food, and it reminds you that you can always rely on the basics."

+ Manly Vegan Overnight Oats - "We’ve said it before and we’ll say it again: making it vegan doesn’t mean making it wimpy. Kayli came up with a great way to drop the dairy from one of our favorite breakfast staples – overnight oats. We love the simplicity of this breakfast- throw some stuff in a bowl the night before and when you wake up, breakfast is served."

+ Avocado Toast Two Ways - "When the temps sore in the summertime (and the pool calls your name), time spent at the stove tends to wane. Lunches are lazy, portable grab bags of snack foods, and dinners are either grillable or no-cook. My summer darling? Avocado toast. With a quick blast of the toaster and a smoosh of the fork, lunch is served."

Plus... Kayli tackled another common question she gets about being a plant eater:

+ Why Plant Protein is Higher Quality Than Animal Protein - "You’ve probably heard animal protein called “high-quality” protein. Here is why that is a load of bull (pun intended)."

READ | Why 'Natural' Doesn't Mean Anything Anymore
"Something in the human mind, or heart, seems to need a word of praise for all that humanity hasn't contaminated, and for us that word is natural. (...) And yet at the opposite end of the spectrum of meaning, where humanity in some sense stands outside nature - as most of us unthinkingly believe - what is left of the natural that we haven't altered in some way?"

CHECK YOURSELF | How Hip-Hop Went Vegan
"Stic Man, from the group Dead Prez, describes his transition in grisly terms: “I was surviving on smoke, bourbon, and hot dogs and then I was diagnosed with gout,” he says. His wife, a vegan chef, encouraged him to realign his diet—a move he says has paid dividends and set him on a course of spiritual enlightenment. Now Stic tends to his community garden and lights up his Instagram account with pics of garam masala veggie burgers, coconut kale, and tomato wraps.”

COOK | Trail Mix Cookies
"As we wind up the (too short) weekend, it's easy to dismiss Sunday as a day that is just-waiting-for-Monday-to-hit-you-right-in-the-face. But, it's still the weekend, which for me, means bit of extra time. So, let's whip up some cookies." Our friend Anna whipped these babies up after some inspiration from our Happy Hippie Cookies... and we're glad she did.

EAT | The 5 Best Vegan Frozen Treats in St. Louis
"Steamy St. Louis summers are borderline unbearable without the sweet relief of a frozen treat. Dairy-laden desserts are easy to find, but what about the lactose-intolerant and vegan crowd? Luckily, many St. Louis spots offer crave-worthy treats sans milk, cream and butter. Cool down with a vegan frozen delight from one of these five local shops."
