What's ripe in August? Squash!

During August we enjoy the abundance of freshly, grown local vegetables as all the veggies we love in July continue to be plentiful. We also begin to get a hint of fall as the hard "skinned" squashes come to market, such as Acorn squash and Butternut squash. This week we have an easy and delicious Butternut squash recipe that pairs well with a simple summer salad of greens and sliced tomatoes. Butternut squash is delivers ample fiber, in addition to potassium and B6. The general rule of thumb for storing and keeping hard skinned squashes is 1 week at room temperature. Refrigerating hard skinned squashes causes the skin to soften and the meat becomes stringy. Keep your hard skinned squashes in baskets (air prevents the squash from going rotten) or just lay them on your counter.

Butternut Squash Risotto with Saffron

Ingredients:

 

  • 1 butternut squash (2 pounds)
  • 2 tablespoons olive oil
  • Kosher salt and freshly ground black pepper
  • 6 cups chicken stock, preferably homemade
  • 6 tablespoons (3/4 stick) unsalted butter
  • 2 ounces pancetta, diced
  • 1/2 cup minced shallots (2 large)
  • 1 1/2 cups Arborio rice (10 ounces)
  • 1/2 cup dry white wine
  • 1 teaspoon saffron threads
  • 1 cup freshly grated Parmesan
Preheat oven to 400 degrees. Peel the squash, remove seeds, and cut into 3/4 inch cubes. Toss the squash in olive oil, salt, and pepper. Spread the squash on a cookie sheet and roast in oven for 25-30 minutes, tossing once so all sides are browned. In a heavy bottomed pan or Dutch oven melt the butter and saute the Pancetta and shallots on medium heat for 10 roughly 10 minutes, until the shallots are clear. Add the Arborio rice and stir to coat the grains with butter. Add the wine and cook for a few minutes. Add two full ladles of chicken stock to the rice. Add the Saffron, 1 teaspoon salt, and 1/2 teaspoon pepper. Continue stirring frequently so the rice doesn't stick, until the liquid and absorbed. (5-10 minutes) Continue adding the stock 2 ladles at a time, stirring often. As the rice becomes slightly dry keep adding stock. Continue cooking until the rice is cooked through, but still al dente, about 30 minutes. Remove Dutch oven from heat and add the roasted squash and parmesan. Serve hot with parmesan threads and freshly ground pepper tossed over the top.
