HGC Seeks Directors


We are currently seeking candidates for the Hudson Grocery Co-op Board of Directors. 

As a Director, you will have the satisfaction of serving a growing organization which will cultivate and sustain the local economy here in the St. Croix Valley! 

The owners of Hudson Grocery Cooperative will elect new directors at the annual owner meeting which will be held in November. Our volunteer Board is made up of 5 to 9 co-op owners who each serve a specified term. Directors commit to attending meetings, sharing ideas and pursuing educational opportunities. 

If you are interested in learning more about becoming a Board Member - please reach out at  hudsongrocerycoop@gmail.com. We will be happy to talk you through the process and give you a better idea of what being on the Board entails.

Carol Skinner: Owner 114

Carol has been an active owner in the Hudson Grocery Co-op for a number of years. Her vision is to have a store in downtown Hudson where local farmers can sell their produce. Carol loves ethnic food and enjoys the diversity of foods and spices offered at grocery co-ops.

Carol is an attorney with the local firm of Skinner and Associates. Her community involvement has included serving on the Board of Directors for the YMCA and the St. Croix Valley Sexual Assault Response Team. Carol has also volunteered with Youth Action Hudson, as well as United Way.

A favorite food memory for Carol is participating in watermelon races as a child.

Volunteer Opportunities

HGC still need a few more volunteers this weekend for the WWSDA Sheepdog Competition at Badlands Sno-Park, 772 Kinney Road, on Saturday, Sept. 2 and Sunday, Sept. 3 from 8 a.m. - 5 p.m.

The Spirit of the St. Croix Art Festival at Lakefront Park is set for the weekend of September 23 and 24. We need volunteers to fill shifts manning the HGC booth for a variety of shifts on Saturday, 10 a.m. to 5 p.m. and Sunday 10 a.m. to 4 p.m.
 
We will be making vegetables prints with the kids. This event is an opportunity for families to volunteer together, older children can help demonstrating the crafts and parents can talk with guests about the co-op.

The National Night Out at Hudson's Lakefront Park provided another opportunity for HGC to get out in the community and share information about bringing a grocery co-op to Hudson. Thank you HGC volunteers, (l-r) Jacki Bradham, Tracy Yndestad and Eric Anderson.

We are excited to be recruiting new Board Members for the upcoming election. Even if you are not interested yourself, we would appreciate any recommendations you have. You do not need to have a certain skillset to be on the Board, we just ask that you share the same passion and commitment that we do when it comes to opening a co-op in Hudson! Brown Bag Apple Salad
As kids head back to school, this tasty apple fruit salad is perfect for a brown bag lunch. If refrigerated, try it with Greek yogurt, too.
 
Servings: 4-6
 
Ingredients
1 apple, cored and cut into
     1/2-inch pieces
1 cup fresh pineapple, cut into
     1/2-inch pieces
1 cup seedless grapes, halved
1 small orange, peeled and
     segmented
1 tablespoon honey
2 tablespoons apple juice
1 tablespoon lemon juice
1/2 cup granola
Pinch of cinnamon
3 tablespoons plain Greek
     yogurt (optional)

Preparation
In a large bowl, mix together all of the ingredients and serve immediately. If making the salad a day ahead, add the granola just before serving.

Serving Suggestion
Pack the apple salad into individual serving containers and top each with equal amounts of the granola (if the lunch box/bag will not be in the refrigerator, leave out the yogurt). Substitute orange juice for apple juice or lime juice for the lemon juice for an even perkier flavor.
