Chef Val Yeager
THAT Brewery & Pub in Pine is home to Chef Val Yeager. She came on board in June. We are very excited to have her with us to bring local fresh food and cooking with THAT crafted beer.
Val has experienced it all, from small mom and pop bakeries, corporate restaurants, luxury resorts, Thai food, to street side grab and go.

Chef Val is a classically trained Chef from Le Cordon Bleu. She has a background in cooking at The Four Seasons Resorts on the private island of Lana’i, Hawaii. While working at the Four Seasons Lodge at Koele, Val gained insight to the “Slow Foods Movement” through farm to table practices. Slow Food is a grassroots organization founded by Carlo Petrini in Italy in 1986. It has since spread worldwide. Promoted as an alternative to fast food, it strives to preserve traditional and regional cuisine and encourages farming of plants, seeds and livestock characteristic of the local ecosystem.

Chef Val states; “Receiving beets and carrots, harvested that same day, with the smell of fresh dirt enticed me to move across the channel to the remote town of Hana, Maui. Here I was exposed to cross cultural cuisines throughout Japan, Philippines, Thailand, and Hawaii. I worked with the certified organic farm, Hana Fresh, at a non-profit market designed to support the health center. Here I produced fresh meals and “value added items” from the farm and ocean, as well the daily bread. I lived off the grid... deep in the jungle with water catch and solar  panels while I gained a deeper appreciation and respect for what it takes to produce nutrient rich vegetables and beef, sustainably. I learned the importance of composting, feeding animals the scraps, working with farmers to create a circle of balance with food and the environment. I moved on from Hawaii to enjoy Southern Utah's beauty. I was the Chef at Zion Mountain Ranch where I prepared unique daily offerings from their farm with occasional buffalo from the preserve. Prior to moving to Pine, I was the Chef at Stone Hearth Grilles fine dining restaurant near Bryce Canyon.

"Scratch cooking at THAT Brewery, with the amazing craft beers, while utilizing garden and farm fresh, seasonal local ingredients, is my vision at THAT Brewery.”
A fine beer may be judged with
only one sip,
but it's better to be thoroughly sure.
