Here is your weekly dose of Five Point Friday - a list of what I'm learning, enjoying, pondering, or reading.

What I'm reading ---- "Colorado's Fourteeners From Hikes to Climbs" So I mentioned before that one of my goals for next summer is to tackle some "fourteeners" (14,000 foot mountain peaks) in Colorado. I've narrowed it down to 3 near Durango - called the "Windom Group" - the Windom Peak, Sunlight Peak and Mount Eolus. If you've done these or been on these trails, please shoot me an email, I'd love to chat.

What I'm listening to ---- "Planet Money - How to make it in the Music Business" a short podcast on how people are making money in the music business. There are artists that are selling snippets of music - imagine 40 different single taps on a snare drum - and making six to seven-figure incomes. The way music is made is changing, and artists use these snippets to build songs you hear on today's radio stations. Fascinating.

Work Stuff ---- "Kiplinger - Customers get a Break on Medical Debt". I've seen this many times - an insured has a medical claim that takes forever to get paid, a claim dispute, or a provider never sends a bill or sends it to a wrong address. Next thing you know, the insured is getting calls from a debt collection agency. Well now, the major credit rating agencies are extending the timeframe of negative reporting and other positive actions to help the insured/patient.

What I'm eating ---- Cubano Chicken (Pickle, Ham, and Swiss Chicken Roll Ups
INGREDIENTS:
- 4 (1 lb) thin boneless chicken cutlets
- 1 1/4 cups pickle juice (enough to cover chicken)
- 4 teaspoons deli mustard
- 2 oz thin sliced reduced sodium deli ham
- 2 oz shredded Swiss cheese
- 1-2 dill pickles, sliced very thin lengthwise, dried on paper towel (I used a mandolin)
- olive oil spray
For the breading:
- 1 large egg, beaten
- 1/3 cup seasoned breadcrumbs
- 1/3 cup seasoned panko*
- cooking spray
DIRECTIONS:
- Place chicken in a shallow bowl and cover with pickle juice (enough to cover completely). Marinate in the refrigerator 8 hours.
- After 8 hours, drain and dry the chicken completely on paper towels; discard marinade.
- Preheat oven to 425F. Spray a baking sheet with oil.
- Spread 1 teaspoon of mustard over each piece of chicken.
- Layer the ham on top, then the Swiss cheese and pickles along the center and roll.
- Place egg in a medium bowl.
- In a shallow bowl, combine the bread crumbs and panko. Dip chicken in the egg wash, then into the breadcrumb mixture and shake off excess.
- Transfer to the prepared baking sheet and spray the top generously with oil. Bake 25 minutes, until golden outside and cooked through.
