Beef in Guinness

2 1/2 pounds beef
1 large onion
6 carrots
2 tablespoons flour seasoned with pepper & salt to taste
4 Tablespoon of beef juice
1/2 cup dries cider
1 cup Guinness with a little water, add more to taste if you wish
Sprig of parsley for decoration or you can add chives for a little zing

Cut beef into chunks.  Peel and slice onions and carrots.  Roll beef in flour and brown quickly in the beef juice or hot butter.  Fry onions until just brown.  Put beef back in pan and add carrots and liquid.  Bring to boil and reduce heat to simmer.  Cover and cook 1 1/2 hours.  Check not periodically.  Add more liquid if needed.  Chop parsley or chives and sprinkle on top when finished.  Serve with boiled potatoes or rice.
