mea culpa, lo siento, je suis désolé

Word of Mouth Magazine profiled a groundbreaking local farmer, Gowan Batist of Fortunate Farm, in our spring issue. We were heartbroken when she pointed out that we misspelled her last name (Batist, not Batiste—no e). We are so sorry, Gowan! We hold your work in the highest esteem.

In addition the town of Caspar was spelled with an e in the magazine and on the cover. We know that is not right, but it slipped past our eagle-eyed staff, including myself. All these rouge e’s have caused much distress, and we are going to double-down on our editing to make sure errors like these are caught and corrected before print time.
Gowan has been busy getting her farm GMO Project certified, which sounds strenuous and fascinating (figuring out if tractor fuel is genetically modified?), as well as designing a hydrology plan that ensures that Fortunate Farm is an excellent neighbor. Hopefully she will tell us more in a future column. Until then stop by the Fortunate Farm table at the Fort Bragg Farmers’ Market or contact them for a farm tour: fortunatefarm.com.

St. Malingo’s Day Corned Beef Bibimbap

A good friend of mine has created her own holiday, St. Malingo’s Day.  My friend was adopted from Korea into a Northern California family with Irish roots, hence the holiday combining her Korean and Irish heritage. In her honor I have crafted St. Malingo’s Day Bibimbap combining wonderful ingredients from both cultures.

Gochunjang Paste

  • 4 Tbsp Sriracha or Asian Hot Pepper Paste
  • 2 Tbsp Toasted Sesame Oil
  • 1 Tbsp Sesame Seeds (lightly toasted in a skillet or toaster oven)
  • 1 tsp sugar

1 batch White Rice cooked

Kimchee for garnish (Mendo Ferments preferred)

Bibimbap

  • 2 Tbsp Peanut Oil
  • 3 Carrots cut into matchsticks
  • 1 Zucchini cut into matchsticks
  • 1 bunch Spinach or 2 cups loose baby Spinach
  • 1 cups flaked Corned Beef (preferably slow cooked in a Dutch oven)
  • 1 Tbsp toasted Sesame oil
  • 4 Eggs fried over easy

Mix all the ingredients for the gochujang paste in a small mason jar and set aside. This paste will keep for a few weeks in the fridge if you can resist eating it on everything.

Cook the rice while assembling and cooking the Bibimbap.

Using a wok or large skillet heat peanut oil until shimmering. Add carrots and zucchini stirring often until softened. Add spinach and combine until just wilted. Season with salt to taste and remove to a platter.  Add corned beef to skillet until heated through and separated into flakes, add to platter. Add sesame oil to pan and some of the cooked rice. Cook until a crispy rice layer forms in the skillet.

In a separate pan fry eggs until cooked over easy. Gather individual bowls and fill with a scoop of rice, portion of crisped rice, sautéed vegetables, and corned beef.  Top each bowl with an egg and garnish with kimchee, and a generous dollop of gochujang paste.

Serve with a pint of Guinness or a dram of Powers Irish Whiskey.  Erin Go Bragh!
