Assemble Supplies
You can use any chocolate mold you desire! We like this one we found on Amazon, by Cybrtrayd.

Melt the Chocolate Down
- Empty the bag of chocolate chips into a medium saucepan
- Melt on low heat, stirring occasionally and watching closely so it doesn't burn
- Once melted, transfer to a measuring cup that you can pour from
|

|
Fill the Molds
- Carefully pour chocolate into each mold
- Place mold into the freezer for 1-2 hours or until solid
- Once solid, carefully remove from the mold

|
Dress it Up
- Cut the top off of a Ziploc® bag
- Place the bunny inside
- Tie the open end with a decorative ribbon
- Place in Easter basket
- Enjoy!

For a fun spin on traditional carrot cake, try these tasty low carb Carrot Pancakes with cream cheese topping! They are sure to be a hit at your Easter brunch!

You will need the following:

Prepare LC-Pancake Mix according to package. (If you're making this for a crowd, adjust the amounts to use the whole package). Add 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon ground ginger, 2 cups grated carrots, and 1/2 cup barberries.

To make cream cheese topping mix together 4oz softened cream cheese, 1/4c LC-Confectionery Sweetener, 2-3 Tbsp heavy cream, 1/2 tsp vanilla, and a dash of cinnamon. Cook pancakes in coconut oil.
Top with cream cheese topping, barberries, chopped walnuts, extra grated carrots and enjoy!
Approximately 9 net carbs per two 4" pancakes with 1/4c cream cheese topping.
