Fresh, crisp and delicate, Green Almonds are a nice delicacy to arrive this Spring! These may not be as recognizable as their hardened, ripened stage, but rest assured, you can pop these treats whole in your mouth for a fresh snack! Green Almonds have a soft, fuzzy, outer skin (they’re members of the peach family, you know) and within its hull is a tiny, pale seed filled with a jelly-like flesh which is the young version of the almond we know and love. Along with their delicate almond flavor, they’ve got a real “green” taste and watery texture to them, like biting into a green apple-green grape hybrid. Chop them up and add their crispness to a salad, salsa or relish!

What makes Purple Asparagus purple? High levels of antioxidants, which have protective health benefits, give this member of the asparagus family it’s regal hue. This velvety appearance is only skin-deep as its interior ranges from pale green to creamy white.
 
Whether sautéed, grilled, or steamed, it’s best to cook Purple Asparagus fast and hot to keep that color thriving! While being larger than the green variety, Purple Asparagus is also less fibrous, and therefore, more tender with similar flavor notes of artichoke, barley and almonds – the perfect compliment to a bright salad.

Morel Mushrooms have been growing on this earth since the age of the dinosaur! But they weren’t appreciated until humans came across them. Morels are the most popular, edible mushroom in the United States and are also known as “molly moochers,” “hickory chickens” and “dryland fish.” Hunting for them has become a great pastime for many and definitely worth all the effort. Not meant for raw consumption, a simple sauté and seasoning is all you need to enjoy their meaty, earthy hazelnut flavor!
