Wild and Wonderful Foods Availability 3/20/17


Dear Chefs friends,


I'm back this week now that the snow is melting. Snow is an amazing thing. Yes, there is the beauty... but of more benefit to people like me and you is the nitrogren it adds to the soil. People wonder why wild foods are so delicious and I’d have to say that it’s in the soil structure of years of snow and leaf fall in the woods where the foods are growing that makes it so healthy. I can feel this as I harvest and eat them myself. I hope you do too.

 

This week, as usual, I'll deliver to you on Thursday afternoon. Getting your orders to me sometime on Tuesday would be great because I will likely be harvesting on Wednesday afternoon because Thursday is going to be very cold. Also, usually there are a few items that emerge during the week that aren't on this list, so I may text you with new things. That being said, the plants have been under snow for the past week and getting huge quantities at this point in the spring are hard, so prices are a little higher than they will be on most items in a few weeks.

 

Also, the chef plant walk that I had publicized for today I am postponing and will do in a few weeks because the area that I advertised doing it is still mostly snow covered and the snow definitely slowed the growing things down.





 

Harvest to choose from for this week

 

Garlic Mustard whole plant: $13lb. The whole plant (root and the leaves) harvested together and bunched. The root can be used as a horse radish substitute.

 

Patience Dock: $6lb. Spinach Substitute. really tender this time of year. Creamy when cooked.

 

Nettles: $18lb. This king of wild foods is just emerging. the price will fall as it gets more abundant but definitely get some now because it is considered a wonderful cleansing food for early warm weather. Availability is limited!

 

Chicweed $20lb Great green for raw salads, garnishes, pesto and sauces. (limited)

 

Bronze Fennel Fronds: $4 oz. This wonderful frilly sprout makes a nice garnish and is great for deserts

 

Watercress: $14 lb Its up. Only a few lbs available if that so order first if you want. Otherwise wait for a week or two and you’ll get in abundance..

 

Wild onion (whole Plant) $16lb. strong flavor, garlic like.

 

Pennycress: $2 by the oz, or $25lb. Really nice early green, pungent taste. This picture below is the pennycress I harvested last week. Also it is one of the earliest plants to go to flower.
