When we taste through wines to feature for our weekly ad specials, we are always searching for the elusive combination of bargain price and top shelf flavor. Cabernet is a more challenging varietal to find wines that offer great value, mostly due to the fact that it generally sells well off the shelf and is very well known. Once in a while we will find a Cab from a lesser known area that really impresses us with its flavor and has the requisite budget-friendly price point. Enter: Hyatt Rattlesnake Hills Cab.

The Rattlesnake Hills AVA is an area particularly well suited to growing high quality grapes as it is protected from ocean influence to the west from the high Cascade range and guarded from Canada's polar air to the north by its namesake Rattlesnake Hills and the Yakima ridge. Hot days, cool nights and sandy soil on top of rock provide excellent conditions for growing ripe, rich and complex Cabernet grapes. 

This 2012 Cab is drinking beautifully right now with aromas of fresh blackberry cobbler, black currant and cigar box. The palate is rich and expansive with plentiful black and blue fruits, nutmeg, vanilla bean and noticeable oak influence. This wine is much more akin to it's California counterparts than traditional Washington Cab in its lush fruit character and restrained earthiness. We recommend pairing this wine with bold, meaty dishes and strong cheeses!
