Beechwood Inn’s Gayle and David Darugh, Best Chefs America,
paired with award-winning wines from Stonewall Creek Vineyards.
Watch the sunset over Stonewall Creek Vineyards and Glassy Mountain with a glass of Stonewall Creek’s 2016 Yukari rosé (dry Provence style) paired with local goat cheese, fennel sausage, house-made pesto and crostini.
Amuse
Stonewall Creek’s 2014 Boriana* (dry Petit Manseng, last bottles from the Facklers’ Wine Library) served with duck confit spring roll, warm mirin glaze and local arugula.

Appetizer
Stonewall Creek’s 2014 Malbec with slow cooked pork belly (Tamworth pig) and cannellini bean cassoulet with smoked pork jus.
Salad
Local organic micro-green salad with toasted black walnuts, house-made pickles and aged sherry vinaigrette. Chef Gayle’s sourdough bread and Spring Ridge Creamery butter.
Entrée
Stonewall Creek’s 2014 Cabernet Franc* served with fresh seared wild salmon, wilted organic kale, white wine/lemon/shallot sauce, Charleston Gold Laurel aged rice and local asparagus from The Stack Farm.

Standing Deer Cellar’s 2016 Whitetail (off dry Petit Manseng made with grapes harvested at The Stack Farm nearby) served with Chef Gayle’s fresh strawberry trifle and vanilla cream. Fresh brewed coffee and herb teas.
