Spring to 500 Campaign

The HGC Spring to 500 campaign ended on last day of Spring. What an exciting campaign! We received a total of 56 new owners during the campaign - which brings us to 506.

On behalf of the Board, we want to thank everyone that helped us reach this milestone. We established the campaign as a way to gauge ongoing community interest in bringing a Co-op to Hudson. Given our results we are confident that we are on the right track.

We have an even bigger goal to meet by year-end, so don't let the end of this campaign stop you from spreading the word. Thank you again for your participation!

Owners who joined during the campaign entered a drawing for two tickets to The Phipps Center for the Arts and a $50 gift card to Pier Five Hundred. And the winner is….  HGC Owner #462 Judy Schottler!

Sarah Bruch - HGC Owner 16

Sarah has been an owner and strong supporter of the Hudson Grocery Cooperative since its beginning. The Co-op excites her because she loves supporting local farmers and businesses. When Sarah and her family shop local, they know they are building a stronger community. The farmers market is great, but only available for a limited time. Having the opportunity to shop at a hometown Co-op to meet her family's needs is very appealing.

Sarah is active in our schools and our local business community. She is co-owner of The Purple Tree in downtown Hudson. Additionally, she spends time working on legislative and local policies which relate to her business and personal convictions.

When asked about a favorite food memory, Sarah recalls many family meals where daily events, funny jokes and stories were shared over yummy, healthy food. Now that her sons are growing up, those memories are ever more dear to her.


Summer is flying by and we have been spending our time out-and-about in the community. Two weeks ago our volunteers braved the windy weather at the Mutt Wash downtown and just last weekend we were number 39 in the Hudson Booster Days Parade. We had a great time and we received many inquiries from parade goers about becoming a member, as well as interest in how close we are to securing a location. We love the questions and the community interest!

When asked these questions (especially the one about securing a location) the answer is never as cut-and-dried as one might like. This number really depends on the level of continued community interest - from both an ownership and financial perspective. As you know, we just finished a successful Facebook campaign and we are gearing up for something even bigger in the fall. We are also avidly seeking speaking engagements and any other opportunities that may be out there for us to get in front of a group and discuss bringing a grocery Co-op to Hudson. Over the course of the next six months, if we are able to continue (and exceed) the momentum that the Spring to 500 campaign brought, we are confident that we can get close to 700 owners by year-end which will move us closer to securing a location.

In order to continue this conversation and ensure that we are doing our part, we strongly encourage all owners to attend a Board meeting. Meeting dates and locations will be posted on Facebook, as well as on our website. Owners who attend a meeting will have the opportunity to ask questions and engage in meaningful discussion surrounding many aspects of planning for the Co-op. The next meeting will be on July 11th at 6:30 PM. We will be meeting at 701 2nd Street and we hope to see you there! Thank you again for your continued support!

Corn & Kidney Bean Salad

This side salad is perfect any time of the year and goes well with your favorite grilled foods. 
Makes 4 servings

Ingredients
16 ounces corn kernels,
       fresh, canned, or frozen
16 ounces kidney beans,
       canned
1/2 cup red onion, diced
1/4 cup red bell pepper, diced
2/3 cup apple cider vinegar
3 tablespoons honey
1/4 cup fresh cilantro
      (or parsley), chopped
2 teaspoons garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1 lime, cut into wedges

Preparation
Rinse and drain the kidney beans and corn (if canned).

In a small bowl, whisk together the honey and apple cider vinegar. Add garlic, cilantro, salt and pepper, and mix well.

In a large bowl, combine the corn, kidney beans, and red onions. Toss with dressing and let sit 30 minutes to 2 hours at room temperature. Garnish with fresh lime wedges.
