fresh cucumber & snap pea salad

July brings more variety to fresh veggies in New England. You'll find tomatoes, snap peas, cucumbers, beans, zucchini and squash. Corn should be "knee high by the 4th of July" so soon you'll be eating fresh corn on the cob. This week's recipe is a simple but delicious, fresh cucumber and snap pea salad.
Ingredients you'll need:
1 cup plain Greek yogurt
1/4 cup white wine vinegar
1 teaspoon caraway seed
kosher salt and black pepper
1 cucumber, sliced
3/4 pound sugar snap peas, trimmed and halved

Whisk together the yogurt, vinegar, caraway seed, 1 ½ teaspoons salt, and ½ teaspoon pepper. Fold in the cucumber and snap peas. Refrigerate for up to 8 hours. You may substitute dill, cilantro, or mint for caraway, or simply add onto the caraway.

Wednesday we're at Lafayette Farm Stand in Manchester 3-6pm and the Derry Farmer's Market 3-7pm.
Thursday find us at Manchester Community Market 3-6:30pm.
Weekend shoppers will find us at Seacoast Community Marketplace 10-2pm and Milford Farmer's Market 10-1pm. Sunday we're at Salem Farmer's Market 10-2pm and Nashua Farmer's Market 10-2pm. Enjoy our fresh veggies wherever you live!


note to our CSA shareholders:
Please remember to bring your used CSA bags back to the farmer when you pick-up your next CSA share. This way we always have a bag to pack your freshly picked produce. In addition, we kindly ask that you give us 24-hour notice if you are unable to pick-up your share. If you are planning a vacation let us know and we can arrange for you to get a voucher for a share upon your return. We allow for two vouchers per season.
