Five Point Friday

From the Blog and Minds of SB&K Benefits, L.L.C.

Howdy!

Here is your weekly dose of Five Point Friday - a list of what I'm learning, enjoying, pondering, or reading.
What I'm Reading ---- Half Man, Half Bike: The Life of Eddy Merckx, Cycling's Greatest Champion I've been a fan of Eddy Merckx since I was in high school, and much of my training and racing was inspired by him. I even had the chance to meet him at InterBike many years ago. This book tells of his youth, career, and what drove him to his success.

What I'm listening to ---- Podcast from This American Life. The episode is "Notes on Camp" an oldie but goodie that will bring back memories if you went to summer camp, and give you insight into this world if you didn't.

What I posted on my blog (yes, work stuff!) ---- "Know Before you Go - a guide for where to go if you need medical care". We always talk about various providers during enrollment meetings, especially Urgent Care versus Emergency Room. So on our site, we posted a handy guide to care. Pay special attention to some of the tools to find Urgent Care centers.

What I'm eating ---- Delish Baby Back Ribs in the Oven I've shared this one before, but worth sharing again. If you are as big a fan of Baby Back Ribs as I am, this is a great recipe.

1 rack baby back pork ribs (or other kinds, but baby back ribs are the most tender)
kosher salt
cracked black pepper
barbecue sauce
Preheat oven to 400 degrees. Place 1 rack of baby back pork ribs on a large piece of foil.

Sprinkle liberally with kosher salt and cracked black pepper. Place fat side up on the foil. (rib bones curve upwards like a smile)

Cover ribs with a second piece of foil and fold each edge tightly so moisture is sealed in. Bake in preheated over for 1 hour. Remove ribs from oven and remove foil cover.

Turn ribs over, brush with Barbecue Sauce. Return ribs to oven, uncovered. Cook 20 minutes more. Cut and serve!

Quote I'm pondering ----

"It is our attitude at the beginning of a difficult task, which, more than anything else, will affect its successful outcome"
- William James
